San Román Malvasía is a barrel-aged white wine made by Maurodos with the Malvasía variety in the D.O. Toro (Castilla y León).
Mariano García from Bodegas Mauro started the Maurodos project in 1995 in the Toro Denomination of Origin, in the towns of Pedrosa del Rey, Villaester and San Román de Hornija. This project mostly works with the Tinta de Toro variety, but does include other varieties like the Garnacha and Malvasía.
San Román Malvasía comes from vines aged over 60 years old, planted on sandy soils and lying 700 metres above sea level. Although not officially certified, these strains are cultivated using organic and ecological farming and no herbicides or pesticides.
When the San Román Malvasía grapes reach the winery, they are selected and destemmed. It is then left to macerate with skins for 12 hours and after being racked through decantation, it is transferred to 500 litre barrels for fermentation. Finally, it is allowed to age for 10 months with periodic movement of the lees.
San Román Malvasía is the first white wine produced by this Toro winery using old Malvasía Castellana vines, which are also known as Doña Blanca. A rounded, enveloping and fragrant wine.
Tasting notes
San Román Malvasía is a white wine with complex aromas of white flowers and chalk mineral notes. On the palate it is enveloping, smooth, fresh and very direct.
