The raw cows milk curd is shaped into a square using a special cotton cloth called a fogasser, which gives the cheese its distinct cushion shape. The cheese is then pressed, imprinting the pattern of the cloth into the cheese. This amazing cheese is wonderful on its own, is perfect with Spanish reds and makes a great addition to the cheese board.

The majority of dairy cows are found in the mountainous regions of northern and northwestern Spain as well as in the Balearic Islands to the east. The cool-loving ruminants thrive in the milder climates and terrain of those areas. Happy cows translate to better milk which, in turn,provides the building block for great cheese.
