Vinifacation and Ageing
The fermentation takes place in a period of 6 to 8 days, not exceeding the temperature 26/28ºC. The wine remains in contact with the skins in maceration, for a period between 5 and 10 days. The wine remains in French and American oak barrels for 3 months.
All kinds of stews, grilled seasonal vegetables, cheeses of short and medium cure, sausages, rice, grilled white and red meats.
