Development

Manual destemming, grain by grain.
Alcoholic fermentation in small oak vats of 10 hectolitres capacity. Traditional tread.

Malolactic fermentation in new French oak barrels.

Aging for 18 months in new French oak barrels.

Tasting note

Black gagged. Black fruit, liquor, Asian spices and flower background. Velvety, well balanced, elegant, powerful and complex, with long finish and persistence.

Operating temperature: 16-18 oC
